This year, neither Angela (my bff) nor I could even begin to contemplate cooking a full Christmas dinner…so she cooked lebanese green beans and rice..a sort of beef and veg stew poured over rice and vermicelli. Wonderful stuff…but it isn’t what people think of when going to granma’s for Christmas dinner.
So today I cooked a full on Christmas dinner……….turkey, green bean casserole, sweet potato souffle, cheesy shredded potatoes, apple/walnut stuffing, homemade cranberry/orange relish, peas, biscuits……and an apple pie to top it all off.
Angie and Garry brought the furbabies with them and Angie helped me put it all together while the men watched football.
It was great!
Here’s a nice little share for you…how to make Southern sweet potato souffle.
2 large sweet potatoes, peeled and cooked.
1/4 cup maple syrup
1 cup brown sugar
2 eggs, beaten fluffy.
Mix it all together and whip on highest mixer setting fr about five minutes.
Pour into buttered casserole dish, bake at 350 degrees F for about 40 minutes.
this side dish will feed six hungry adults.
